The OpportunityWe are looking for a Head Baker who is equally strong in R&D and production leadership. This role is ideal for someone who enjoys creating and refining products-but more importantly, knows how to translate ideas into scalable, repeatable processes within a central kitchen environment.
You will lead both product innovation and production excellence, ensuring everything we develop can be executed consistently across all outlets.
Key Responsibilities. R&D & Product Innovation
- Lead development and refinement of breads, viennoiserie, and laminated products
- Translate trends and ideas into commercially viable products
- Conduct testing, iteration, and standardisation for consistency and scalability
- Build and maintain clear recipes, SOPs, and production guidelines
. Central Kitchen Production Leadership
- Oversee daily production and ensure consistent output at scale
- Align production planning with outlet demand and business needs
- Ensure smooth execution from prep to final bake
. Scalability & Process Optimisation
- Convert R&D concepts into efficient, high-volume production workflows
- Improve processes, equipment usage, and manpower deployment
- Drive productivity while maintaining product integrity
. Quality Control & Standards
- Implement strict quality benchmarks across all products
- Ensure consistency across batches and outlets
- Uphold food safety, hygiene, and compliance standards
. Team Leadership & Development
- Lead, train, and mentor a team of bakers and production staff
- Develop team capabilities in both production and product execution
- Foster a disciplined, quality-driven kitchen culture
. Cost & Resource Management
- Manage food cost, yield, and wastage
- Support labour efficiency through structured production planning
- Proven track record (minimum 8-10 years) as a HeadBaker, Executive Pastry Chef, or a senior R&D role within a reputable artisan bakery or multi-outlet retail bakery group.
- Exceptional expertise in R&D and new product development, particularly with viennoiserie, sourdough, and laminated doughs.
- Demonstrable experience in menu engineering and a strong understanding of food cost and labour cost management.
- Experience in guiding or collaborating with central kitchen operations to ensure product scalability and consistency.
- Strong leadership and team management skills, with the ability to inspire and mentor a diverse team.
- A keen eye for detail, uncompromising commitment to quality, and a passion for culinary innovation.
- Excellent communication and interpersonal skills, with a collaborative approach to problem-solving.
- Salary: $4,000 - $6,000 (commensurate with experience)
